As half time approached, we had finished off the shrimp and dips and were ready to move onto the main course of our Health Conscious Super Bowl. I wanted to retain the tastes of game food, but not the calorie count. Instead of wings, I made a teriyaki sauce and poured it over skewers of chicken, green pepper, pineapple and white onion, and then baked for about 15 minutes. I thought they turned out great, very flavorful.
We also made turkey miniburgers on french bread (I tried to find whole wheat, but had to settle for organic white) with sharp white cheddar. We just mixed the turkey meat with some onion, garlic powder and salt and pepper. While not quite as juicy as a beef burger, I thought they were a very satisfying substitute.
